Introduction to Olive Oil Tasting Course

As part of the Olive Oil Soul Programme, the Association of Producers in Integrated Protection of Trás-os-Montes and Alto Douro and the Bragança Higher Agricultural School, in partnership with the Municipality of Mirandela and the Olive and Olive Oil Museum, invite you to participate in the Introduction to Olive Oil Tasting course to be held on 3 February.


This Introduction to Olive Oil Tasting Course is aimed at the general public, from producers to consumers, and its main objective is to introduce students to the sensory analysis of olive oil, especially with regard to the knowledge of the positive and negative attributes that an olive oil may have.


Registrations must be sent to the email almadoazeite@gmail.com by the end of January 31st, with the course having the following conditions:


Location: Ecoteca de Mirandela

Time: 9:30 am to 5:30 pm


The initiative will take place on February 3rd, on the same day that Mirandela hosts another Gastronomic Festival of Rancho de Mirandela.


The course program includes the following topics:

  • Obtaining, composition, quality and classification of virgin olive oils

  • Principles of sensory analysis applied to virgin olive oils.

  • Direct and retronasal olfactory aromatic sensations of positive and negative attributes (defects) of virgin olive oils.

  • Identification and distinction of the main positive and negative attributes of virgin olive oils.

  • Classification of olive oils according to the tasting note.
