FROM THE CASTLE TO MONTESINHO

In the far northeast of Portugal, where the mountains rise like sentinels of the border and the valleys guard centuries-old olive groves, a route emerges that crosses three lands of strong and genuine character. Bragança, capital of the district and guardian of a unique medieval citadel; Vinhais, capital of smoked meats and gateway to the Montesinho Natural Park; and Vimioso, land of ancestral traditions and landscapes that merge with the neighboring Terra de Miranda.
This is a territory where olive oil is not just a product—it is part of the identity. The Cobrançosa, Madural, and Verdeal Transmontana varieties find exceptional conditions here, producing Trás-os-Montes PDO olive oils of intense character and marked personality. The olive tree coexists with the chestnut tree, the oak, and, in the most remote villages, with the cork oak, composing a landscape of rare diversity.

Best Time to Visit
This itinerary can be done year-round, but each season offers a different experience:
October to December: Olive harvest season and new olive oil production. The mills are in full operation and the air smells of fresh olives. It's the best time to experience olive tourism in its essence.
January and February: Pig slaughtering and smoked meat season. The Vinhais Smoked Meat Fair (usually in early February) and the Butelo and Casulas Festival in Bragança transform the region into a gastronomic celebration. The Caretos also take to the streets.
Spring (April to June): Nature explodes in color in the Montesinho Natural Park. Ideal for hiking, observing fauna and flora, and visiting traditional villages.
Summer (July to September): River beaches, festivals and pilgrimages in the villages. In September-October, the Ruma do Veado (Deer Rubbing) in the Montesinho Park is an unforgettable sound experience.
Day 1 — Bragança: The Citadel, the Olive Oil and Montesinho
Morning: Citadel and Historic Center
Begin your day at the imposing Citadel of Bragança, one of the best-preserved medieval complexes in Portugal.
The Castle's Keep, with its panoramic views of olive groves and mountains, is the perfect starting point.
Visit the Domus Municipalis, a unique building in the Iberian Peninsula of Romanesque civil architecture, with its irregular pentagonal shape. The Church of Santa Maria completes the monumental trio within the walls.
Descend to the historic center to stroll through the streets of Sé, admire the Abade de Baçal Museum—one of the best ethnographic museums in the country—and feel the pulse of the city that is the capital of the northeastern Trás-os-Montes region.
Lunch
The Solar Bragançano restaurant, near the historic center, offers refined Transmontane cuisine with local products. The Mirandesa-style steak, always finished with a generous drizzle of extra virgin olive oil from the region, is served here to perfection. Alternative: Restaurant O Geadas, by Chef Óscar Geadas, for a signature gastronomic experience with Transmontane roots.
Afternoon: Olive Tourism and Gimonde
After lunch, head to the village of Gimonde, just 6 km from Bragança, at the entrance to the Montesinho Natural Park. Visit a local cooperative or olive mill for a tasting of Trás-os-Montes DOP olive oil with an explanation of the production process — from the olive grove to the final product.
Stroll through the village and across the Romanesque Bridge of Gimonde over the Onor River. If time permits, take the PR2 hiking trail — Montesinho Natural Park Trail, which passes through traditional olive groves and villages with typical schist and granite architecture.
Dinner and Overnight Stay
Dinner at the traditional D. Roberto Restaurant in Gimonde, featuring the best flavors of Trás-os-Montes cuisine: grilled alheira sausage, roast kid goat, butelo sausage with rinds, all accompanied by a good local olive oil.
Overnight stay at A. Montesinho Turismo (Gimonde) — traditional stone rural tourism houses in the heart of the Natural Park, with swimming pool, restaurant and bicycle rental. Alternatives in Bragança: Pousada de Bragança (with a view of the castle) or Solar de Santa Maria (17th-century manor house in the historic center).
Day 2 — Vinhais: Capital of Smoked Meats and Untouched Nature
Morning: Villages of the Montesinho Natural Park
Depart early in the morning towards Vinhais via the road that crosses the Montesinho Natural Park. Along the way, stop at the village of Gondesende, in the heart of the park — one of the most typical villages in the region, with its restored stone houses and an authentic rural atmosphere that transports you back in time.
Near Bragança, don't miss the Castro de Avelãs Monastery, likely the only example of Mudéjar Romanesque architecture in Portugal, whose brick apse predates the 12th century.
Optional (30-minute detour): Rio de Onor, the famous border village between Portugal and Spain, chosen as one of the 7 Wonders of Portugal. The community tradition and agro-pastoral communalism that survives here are unique in Europe.
Lunch in Vinhais
Arrival in Vinhais in the late morning. Lunch at Restaurante Vasco da Gama — the grilled meats are excellent, the alheira sausage with turnip greens rice is delicious, and the roast lamb is to die for. Alternatives: Restaurante O Silva (famous for its roast pork and Tuela trout), Restaurante Paulus (the couscous with salpicão sausage is a must-try), or Restaurante Delfim (specialty: suckling pig from Bísaro pork).
Afternoon: The World of Smoked Meats and Bísaro Pork
After lunch, visit the Interpretive Center of Pork and Smoked Meats, a unique space in the country managed by the National Association of Breeders of Bísaro Pigs. Here you will discover the ancient history of the Bísaro pig — originating from the Celtic stock, since the 6th century BC — and how the smoked meats of Vinhais became the most prestigious in Portugal, with the Salpicão de Vinhais IGP and the Chouriça de Carne de Vinhais IGP as its greatest exponents. Stroll through the historic center of Vinhais: the quiet streets with stone houses, the Castle Tower, vestiges of the medieval walls, the Pillory, the Main Church and the Chapel of Our Lady of the Conception.
If you are traveling with children or simply enjoy nature, the Vinhais Biological Park (3 km from the center) is a must-see: with an organic swimming pool, an interpretive center for the Iberian Wolf, a mycological center, a botanical garden, a center for native breeds and an adventure park. Here you can see the Bísaro pig up close in its habitat.
Late Afternoon: Vinhais Olive Groves
Vinhais is also home to excellent olive oils. Explore the olive groves in the southern part of the municipality, where Cobrançosa and Verdeal varieties dominate the landscape. If your visit coincides with the harvest season (October-December), you can participate in the olive harvest and visit working mills.
Dinner and Overnight Stay
Dinner at one of the local restaurants already mentioned. Overnight stay at the Vinhais Biological Park — wooden bungalows amidst nature, with the serenity of the Montesinho Natural Park as a backdrop. Alternatives: Casa da Barriada in Gondesende or rural accommodation in the surrounding area.
Day 3 — Vimioso: Traditions, Olive Groves and Iberian Fair
Morning: Trip to Vimioso
The third day takes us to Vimioso, about 60 km from Vinhais. The journey is an experience in itself: the landscape progressively changes from wooded mountains to the more open plateaus of the Terra de Miranda region, with olive groves becoming increasingly present in the sheltered valleys.
Vimioso is a municipality with a strong olive-growing tradition, part of the Trás-os-Montes Olive Oil Route. Local production is certified as Trás-os-Montes PDO Olive Oil, highlighting olive oils with an intense fruity profile, made from regional varieties.
Visit to the Historic Center of Vimioso
Explore the historic center of Vimioso, with the Main Church and its religious heritage, the Pillory, and the typical streets. Seek information about the Caretos de Vimioso — an ancestral tradition of masks and fringed costumes that animates Carnival and winter festivals, in a cultural expression shared throughout the Terra de Miranda region.
Lunch and Local Products
Lunch featuring local cuisine: the Mirandesa steak (made with Mirandesa DOP beef, the most prestigious native Portuguese cattle breed), accompanied by regional olive oil, is served here at its finest. Also try the local smoked meats and goat cheeses from the region.
Afternoon: Iberian Fair and Return
If you visit in December, don't miss the Iberian Fair, Arts and Flavors of Vimioso — an event that brings together Portuguese and Spanish producers and celebrates the cross-border identity of this region. Outside of this season, explore the rural villages of the municipality, where the olive-growing tradition remains alive and authentic.
Return to Bragança in the late afternoon (approximately 80 km), with an optional stop at Outeiro — home to the impressive Basilica of Santo Cristo, one of the largest pilgrimage centers in northeastern Trás-os-Montes.
