When December 26th dawns in the villages of Trás-os-Montes and Alto Douro, the bonfires of the previous day still smolder in the squares, but the region prepares for one of the most generous and communal traditions of the Portuguese winter: the Saint Stephen's Festivals [1]. More than a religious celebration in homage to the first Christian martyr, Saint Stephen has become the patron saint of single men from Trás-os-Montes and the symbol of one of the greatest manifestations of hospitality and sharing in the region: the Saint Stephen's Tables, communal meals where all the people — and visitors — are invited to sit and share the same bread, the same codfish, and the same new olive oil from the harvest [2].
