The climate in Vinhais is cold and dry during the slaughtering season, which helps to cure the meat and smoked meats well. The raw material is the meat of the Bísaro pig, raised in a traditional system, based on products and by-products of local agriculture, giving rise to a meat with an unmistakable flavor and unique texture thanks to the intramuscular fat that makes it marbled, soft and juicy. . The seasoning is also different from seasonings from other regions, made in garlic vineyards, with water, wine, garlic, salt and bay leaves.
